OUR SUMMERIEST SALAD: WATERMELON ARUGULA

When the temp rises and humidity makes things thick and slow, when everyone is melting – this salad will give you summertime heat relief. Its deceptively simple. However, the combination of these sweet, crunchy, tart, briny, watery, crisp, and peppery ingredients create something memorable and oh so delicious. 

Ingredients

Watermelon, Arugula Salad

5 cups arugula / rocket
3 cups chopped seedless watermelon
1 cup chopped red pepper
2 cups chopped cucumber (peeled and seeded if needed based on variety)
1 cup chopped tomatoes or split grape tomatoes
1 cup crumbled feta

Watermelon Herb Dressing

1/4 cup lemon juice
1/4 cup watermelon juice
1 tablespoon chopped parsley
1 tablespoon chopped basil
1 tablespoon chopped mint
1/2 cup olive oil
1/8 teaspoon Cracked black pepper or more to taste
1/8 teaspoon Salt or more to taste  

Instructions

Whisk all dressing ingredients together.
Pour 1/4 dressing over arugula and toss. Arrange arugula on serving dish  
Separately, toss together remaining ingredients except feta. Add 1/2 remaining dressing and toss liberally. 
Add mixture to top of bed of arugula and arrange feta on top of salad.
Use remaining dressing for serving if desired.
