Thai Celery Salad

A very simple, yet strangely addictive salad. 


1 tablespoon light oil (olive oil will work fine) 
1 tablespoon sesame oil
2 tablespoons fresh lime juice
2 teaspoons fish sauce
1 thinly sliced red chile (or substitute 1/2 teaspoon red pepper flakes)
6-8 celery stalks, (about 4 cups) thinly sliced, leaves included! 
3 thinly sliced scallions / green onion
1/4 cup chopped cilantro, plus a few leaves for serving
1/2 cup roasted, salted peanuts


Combine first 5 ingredients then pour over and mix well with the celery, scallions and chopped cilantro.

Let sit to marinate for 1 hour refrigerated before serving for best flavor. 

To serve, sprinkle with additional cilantro leaves and peanuts.
