Sweet and Hot Pumpkin Spice Pumpkin Seeds
Makes 1 cup
These are addictive, and only sweet enough to use a caramel base to coat everything in spice. This is a great mix to serve alongside a cheeseboard or with cocktails, to top soups, or for any snacking reason.
Ingredients
1 cup roasted, shelled pumpkin seeds (pepitas)
1 tablespoon butter, melted
2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon chipotle powder*
1 + 1/4 teaspoon pumpkin pie spice
*If you don’t have chipotle, you can substitute the same amount of chili powder or use 1/4 teaspoon cayenne and 1/4 teaspoon sweet, smoked paprika.
Directions
Preheat oven to 350 degrees.
In a bowl combine all ingredients, and gently stir/toss to coat every pumpkin seed well.
Scatter the mixture in a single layer on a sheet pan.
Bake until slightly toasted, about 10-12 minutes, stirring 1-2 times for even baking.
Store in airtight container or zip bags to maintain the crackly texture.
